3 Ingredient Banana Pancakes

I was so surprised at how fluffy these came out. I’ve tried lots of different recipes for pancakes, all fancy and try-hard, but with just three ingredients I think I’ve nailed it.


  • 4 ripe bananas
  • 1 egg
  • 1 cup self raising flour


Mash the bananas in a bowl. If the bananas aren’t quite ready, pop them in the microwave for 20 seconds.

Sieve in the self raising flour, make a well and add the beaten egg. Mix together and pop straight into the frying pan. I didn’t feel the need to let it sit for a few hours; it worked fine straight away!

Fry for 2-3 minutes each side until golden and keep in a low heated oven whilst you make the whole batch.
