Sweet Potato and Halloumi Rösti

Not going to lie this recipe took me forever but I don’t want to put you off as they genuinely tasted amazing (don’t mind if I do). This is a great dish for people who have a bit of extra time and perhaps have people to impress at a dinner party. You could even do it for a fancy brunch if you pop the poached eggs on top. Overall, even though it felt like an eternity, I thoroughly enjoyed making these and I’ll be back on here with a normal potato and parmesan version soon!

350g/ 1.5 cups grated sweet potato

75g/ 1/2 cup self raising flour

1/2 pack halloumi, grated

1 egg, lightly beaten

3-4 salad onions finely chopped

1 tsp smoked paprika

1/2 tsp garlic granules

1 tbsp coconut oil

1 avocado
