Mexican food is hands down favourite cuisine and I always seem to reach for the same thing. You know….enchiladas, fajitas (a classique uni dish) and tacos. So I’m going to branch out a bit more and choose a few different Mexican dishes; watch this space.
I’m going to start nice and easy with a taco salad. I fell in love with this dish when I had a huge one at Chilli’s, Orlando Intl Airport (exotic right) and I’ve oddly not had one since. The weather’s getting a bit nicer so a fresh, full salad seems appropriate. I swear it’ll take you 10 minutes to put this together and unless you smother dressing all over it, it’s super healthy yay!
Ingredients

1 cup radishes, finely chopped
1 large tomato, finely chopped
1/2 lettuce, shredded
2 handfuls crushed corn tortilla chips
1/2 tin black beans
1 cup grated cheddar cheese
1 avocado
1/4 lime
Method
Chop up everything and pop in a bowl on top of the lettuce
